Many people shy away from coconut oil because it’s high in saturated fat. This fat found in high concentrations in coconut oil will not increase cholesterol, but in fact lower cholesterol. One must understand that coconut oil is the healthiest oil available to mankind. When frying food, a national pastime here in Texas, coconut oil will not convert to trans-fatty acids.
